Why 0°C is the floor
Because water freezes. A chiller cooling water below zero is making ice, and ice is not what you sit in.
In practice the limit arrives earlier than the textbook figure. The evaporator, the cold surface the water passes over, is colder than the water itself, so as the bath approaches zero the surface is already below it. Ice starts forming on the evaporator, which insulates it from the water and progressively stops it working. A chiller pushed to its floor spends its effort icing itself up.
That is why claims at 0°C are worth reading carefully rather than dismissing. Kiva Wellness describe their unit as generating real ice, which is a design intent rather than a rounding of 3°C down (September 2026). It is also why most manufacturers stop at 3°C to 5°C: it is the sensible working edge rather than a compromise.
What actually limits the temperature you reach
The spec sheet describes the machine in ideal conditions. Four things decide what you get.
Water volume against the chiller's rating. A unit rated to 320 L in a 400 L tub will run continuously and may never reach its published minimum. This is the most common reason a chiller "does not get cold enough", and it is a sizing mistake rather than a fault.
Ambient temperature. A chiller dumps the heat it removes into the surrounding air. In a 38°C garage in February the condenser has a much harder time giving up that heat, so the whole loop works less efficiently. Every published minimum assumes reasonable ambient conditions.
Insulation and lid. Heat leaking back in has to be removed again. An uninsulated tub with an open surface can leak heat as fast as a domestic chiller removes it, which sets a floor well above the machine's rating.
Ventilation around the unit. A chiller boxed into a cupboard is re-breathing its own exhaust heat. Give it clear air on the condenser side.
What you should actually run
Between 10 and 15°C. Royal Life Saving Society Australia's cold water immersion position statement, current as at February 2024, describes that band as generally considered safe for most individuals, and AUSactive publishes the same figure.
The dose-response evidence agrees. Pan and colleagues, in a network meta-analysis of 55 randomised trials with 1,139 participants published in Frontiers in Physiology (2025), found 10 to 15 minutes at 11 to 15°C best for perceived soreness and 5 to 10°C better for creatine kinase and neuromuscular markers. Nothing in that literature tested or recommended going below 5°C.

Why a low minimum is still worth having
One honest reason, and it is about headroom rather than cold.
A chiller holding 12°C on a 20°C evening is barely working. The same chiller holding 12°C in an uninsulated garage on a 38°C afternoon is working hard, and a unit whose floor is 12°C in ideal conditions will not hold 12°C in bad ones. Margin between the published minimum and your working temperature is what stops your plunge drifting warm in summer.
That is the case for a 3°C machine you run at 12°C. It is not a case for running it at 3°C.
